Raspberry Grilled Cheese

Lusciously sweet raspberries are layered with creamy brie and tangy goat cheese in this updated grilled cheese sandwich.

Ingredients

  • 2 slices multigrain bread
  • 2 Tbsp good-quality double cream brie (with or without rind)
  • 2 Tbsp soft goat cheese
  • 1/2 cup fresh raspberries, preferably organic
  • 1/2 tsp honey (or more, to taste)
  • 2 tsp butter

Preparation

Step 1

Heat 1 tsp butter in a skillet set over medium heat.
Spread the brie on one slice of bread, and the goat cheese on the other.
Scatter raspberries over one slice and top with the other.
Place assembled sandwich into hot skillet and cook until golden brown, about 2-3 minutes. Melt remaining 1 tsp butter and cook sandwich on the other side for an additional 2-3 minutes.
