Black Bean Chipotle Soup

Ingredients

  • 1 lb. Dry Black Beans
  • 4 stalks Celery, chopped
  • 4 Carrots, chopped
  • 1 Yellow Onion, chopped
  • 4 Chipotle Pepper in Adobo Sauce, chopped
  • 1 cup Tomatoes, crushed
  • 1 can Green Chilies, chopped, drained
  • 6 cups Chicken Stock
  • 2 tsp Cumin Ground

Preparation

Step 1

Rinse and sort beans and place in large bowl; cover completely with water. Soak 6-8 hours or overnight. Drain beans; discard water

Place beans in crockpot. Add celery, carrots and onion

Combine chipotles, tomatoes, chiles, stock and cumin in med. bowl. Add to crockpot. Cover; cook low 7-8 hours.

If desired, process mixture in blender.

Notes:
Optional toppings: sour cream, chunky salsa, fresh chopped cilantro
