Salad with Apples and Cashews

Ingredients

  • 1 head lettuce (I have used iceberg, romaine or those prepackaged bags of mixtures)
  • 1/2 bag spinach
  • 4 small apples or 2 large apples , cored and sliced
  • 1/2 lb grated Monterrey Jack cheese
  • 1 (14 ounce) can cashews
  • Dressing
  • 3/4 cup sugar
  • 1 teaspoon dry mustard
  • 1/3 cup cider vinegar
  • 1 tablespoon chopped onion
  • 1 cup salad oil

Preparation

Step 1


Whisk dressing ingredients.

Mix lettuce and spinach in large bowl and combine with dressing.

Toss with apples, cheese and cashews.
