Ingredients
- 2 1/3 cups plus 2 Tablespoons Flour
- 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 1/4 cups sugar
- 3/4 teaspoon of cinnamon
- 3/4 teaspoon of nutmeg
- 1 1/2 Cups Pumpkin
- 1/2 cup water
- 3/4 cup oil
- 3 eggs slightly beaten
- 1/2-1 cup heaping walnuts
Preparation
Step 1
place pumpkin in bowl of stand mixer
add the sugar and blend well
next add the spices of cinnamon and nutmeg
give a quick blend
add water and oil and blend
blend in the 3 beaten eggs
combine flour, baking soda and salt in another bowl and sift
add flour to the wet mixture hand fold in the nuts
spray a jelly log roll pan (true bar pan) or a 9X13 pan bake on 320 until toothpik in center comes out clean
40 to 60 minutes depending on oven and size of pan
love to glaze these 10 minutes after they come out of oven
also like to cool completely and then creme cheese ice them with orange
food glitter on top
If you use pumpkin pie mix out of the can instead of just solid pumpkin cut the spices into 1/2
