Ingredients
- 1 c uncooked rice (yellow saffron rice in plastic bottle)
- 2 c chicken broth
- 6 fresh tomatoes
- 14.5 oz can diced tomatoes
- 1 lb lean ground beef
- 1 T EVOO
- 19.76 oz sweet Italian turkey sausages
- 1 green pepper, chopped
- 1 onion, chopped
- 1 T Tabasco (or red hot) sauce
Preparation
Step 1
Combine rice & broth in pan & bring to boil. Turn heat down to low & cook until rice has holes in it, about 25 min. Peel & chop fresh tomatoes & set aside. Brown beef in lg skillet. Slice & brown sausages in same skillet. Drain beef & sausages reserving oil. Add green pepper, onion & hot sauce to skillet & sauté. Add beef, sausages & tomatoes to skillet. Gently stir in rice. Mix carefully & warm the mixture on low.
