Beef barley soup

A meal in itself.

Ingredients

  • 1/2 lb barley
  • 10 cups water
  • 3 carrots
  • 3 stalks celery
  • salt to taste(1 Tbsp?)
  • 2 1/2 - 3 lbs Chuck roast or stew meat
  • 1 lg. onion

Preparation

Step 1

Rinse barley,then put in a lg. pot. Add
10 cups water.
Add sliced carrots, celery,and chopped onion.
Add meat, salt to taste and cover. Simmer about 3 hrs., stirring occasionally because barley tends to stick on the bottom.

Meat can either be cut into small pieces to put into the soup or left whole to slice later when cooled for sandwiches.
