Ingredients
- 1 T oil
- 1 small onion, chopped
- 1/2 c each green and red pepper, chopped
- 1 c frozen corn
- 3/4 c orzo pasta, uncooked
- 1 can chicken broth
- 1/2 c (1/2 of 8 oz tub) chive and onion cream cheese
Preparation
Step 1
Heat oil on med heat. Add onions, cook 4 min, stirring frequently. Stir in peppers and corn, cook for 2 min. Add orzo, cook and stir 1 min. Stir in broth, bring to boil on high heat. Simmer on med-low 10-12 min or until orzo and veggies are tender and most of liquid is absorbed, stirring occasionally.
Add cream cheese, cook 1-2 min or until melted, stirring constantly.
