Chicken and Black Bean Enchiladas

Ingredients

  • 1 1 1 lb cubed chicken breast
  • 3 3 3 slices bacon
  • 2 2 2 minced garlic cloves
  • 24 24 24 oz picante sauce
  • 16 16 can 16 oz can black beans w/juice
  • red pepper, diced
  • 1/2 1/2 1/2 c sliced green onion
  • 1 1 1 tsp cumin
  • 12 12, 6-7 6-7 in tortillas
  • 9 9 9 oz shredded Jack cheese

Preparation

Step 1

Cook bacon, then chicken, then veggies. Add 1/2 of picante, black bean in juice, and 1/2 of cheese. Roll in tortillas. Top with rest of sauce and cheese. Bake @ 375 for 40-45 min.
