Shrimp Fradiavolo

A Rachael Ray inspired delicious weeknight meal. Yes, I love this one.

Ingredients

  • 3 tablespoons olive oil
  • 6 cloves garlic, minced
  • 4 to 6 pinches crushed red pepper
  • flakes to your taste
  • Finely chopped fresh oregano(1
  • tablespoon)
  • 1/2 cup good sherry
  • 2 cans (28 oz each) crushed tomatoes
  • Salt and pepper to taste
  • Fresh flat leaf parsley, chopped 1/4
  • cup
  • Freshly grated cheese to top if youd
  • like
  • Cooked pasta of your choice
  • Seafood of your choice, shrimp, lobster meat, clams what you like

Preparation

Step 1

Heat oil, garlic,crushed red pepper flakes in a deep skillet over medium heat. Cook until garlic speaks by sizzling in oil. Add oregano and give pan a shake. Add the sherry and reduce liquid by half, bout 1 or 2 minutes. Add tomatoes, salt and pepper to taste, and the handful of chopped parsley. Simmer 10 minutes.

For the seafood of your choosing, add to sauce and simmer till done to your liking and serve over pasta.
