Ingredients
- SALAD:
- 1 bag baby spinach
- 1 box cherry tomatoes
- 1/2 cup slivered almonds(optional)
- DRESSING:
- 2 small shallots
- 2 tbsp. fresh lemon juice
- 2 tsp. white wine vinegar
- 1/3 cup extra virgin olive oil
- 1/2 tsp. salt
Preparation
Step 1
1. Peel and finely dice shallots. Combine with vinegar, lemon juice, and salt. Set aside for 30 minutes.
2. Add the olive oil. Pour on right before serving
