Ingredients
- Vinaigrette:
- 1 pkg. (16 oz.) uncooked whole wheat penne pasta
- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- 1/3 cup grated Parmesan cheese
- 1 Tbsp. Dijon mustard
- 1 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. pepper
- Salad:
- 1 pkg. (6 oz. fresh baby spinach
- 3 medium tomatoes, seeded and chopped
- 3/4 cup (6 oz.) crumbled feta cheese
- 4 green onions, thinly sliced
Preparation
Step 1
1. In a Dutch oven, cook pasta according to package directions. Drain and rinse in cold water; drain again.
2. Meanwhile, in a small bowl, whisk the vinaigrette ingredients. In a large bowl, combine the pasta, spinach, tomatoes, feta cheese, & onions. Add vinaigrette; toss to coat. Serve immediately.
