Lemon Bar Cookies

Ingredients

  • Crust:
  • 1 c butter
  • 1/2 c powdered sugar
  • 2 c flour
  • salt
  • Filling:
  • 4 eggs, beaten
  • 1/4 c flour
  • 2 c sugar
  • 6 T fresh lemon juice
  • rind of 2 lemons, grated

Preparation

Step 1

Crust: combine ingredients and mix well. Press into 13x9 pan. Bake 350 for 15 min or til lightly browned.
Filling: combine flour and sugar, mix in beaten eggs, lemon juice and rind. Pour onto slightly cooled crust. Bake 350 for 25 min or til filling is set. Cool and sprinkle with powdered sugar.
