Ingredients
- 1 yellow onion, grated or minced
- 1 1/2 tsp. coarse salt
- 1/4 tsp. pepper
- 2 large eggs, beaten
- 1/2 cup matzo meal
- 2 lbs. Russet potatoes, peeled and grated
Preparation
Step 1
1.In a large bowl, combine onion, salt and pepper.
2.Add eggs and stir well.
3.Stir in matzo meal and mix until smooth.
4.Add potatoes and toss until completely and evenly coated
5.Fill a large, heavy bottomed skillet with ½ inch of oil.
6.Place over medium heat until oil is almost smoking.
7.Working in batches, carefully spoon about 2 T. of batter into the oil for each pancake. Lightly flatten.
8.Cook until golden on each side, 2-3 minutes, turning once.
9.Transfer to a paper towel lined rack.
10.Serve immediately with sour cream or applesauce.
