Ingredients
- four 6 ounce tuna steaks
- 1/2 c fresh packed parsley leaves
- 1/4 c fresh pack oregano leaves
- 1/4 c fresh mint leaves
- 3 T olive oil divided
- 3 T red wine vinegar
- 2 cloves garlic
- 1/2 t red pepper flakes
- zest and juice of one lemon
- 2 mangos, peeled, pitted and diced
- salt and ground black pepper
Preparation
Step 1
heat the grill to high
in a food processor combine the parsley, oregano, mint, 2 T olive oil, red wine vinegar, garlic, red pepper flakes and lemon zest and juice. Process until well chopped scraping bowl as needed. Add mango and pulse once or twice to combine and lightly chop. season w salt and pepper and set aside.
rub the tuna steaks on all sides with remaining 1 T olive oil then season with salt and pepper. Grill steaks 3 mins per side for med rare. Serve topped with the salsa
