Blackberry Buttermilk Snacking Cake

When I bake, I use whatever is in season and is inexpensive. I also try to bake a small amounts so that we are not having leftovers for days and days after I serve the dessert. This recipe fit the bill.

Ingredients

  • 1 C all purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 4 TBS. unsalted butter, softened
  • 2/3 C plus 1 1/2 TBS. sugar
  • 1 large egg, at room temp.
  • 1 tsp. pure vanilla extract
  • 1/2 C buttermilk, at room temp.
  • 1 1/4 C blackberries plus more for serving
  • Sweetened whipped cream for serving

Preparation

Step 1

1. Preheat oven to 400 F. Butter 9" round cake pan.

2. In small bowl, whisk the flour, baking powder, baking soda and salt. In a large bowl, using a mixer, beat butter with the 2/3 C sugar at medium high speed until fluffy, 3 min. Beat in egg and vanilla. At low speed, beat in buttermilk and dry ingrediets in 3 alternating batches, end with the dry ingredients; do not overbeat. Gently fold the batter just until blended, then scrape into the pan and smooth the top.
3. Scatter the 1 1/4 C blackberries over the batter; lightly press them in. Sprinkle the remaining 1 1/2 TBS. of sugar over the cake. Bake for about 30 min. until a cake tester inserted in center comes out clean.

4. Transfer cake to cooling rack to cool for 10 min. Serve with whipped cream and more blackberries.
