Sweet Potato and Red Pepper Soup

Ingredients

  • 1 onion, chopped
  • 1 garlic clove, minced
  • 2 red peppers, chopped
  • 1/4 tsp Italian herbs
  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • 2 sweet potatoes, peeled and chopped
  • 420 g tin chopped tomatoes
  • 6 fresh cherry tomatoes
  • 1/2 pint vegetable stock

Preparation

Step 1

Add onion and garlic to medium saucepan coated with cooking spray. Cook until just soft. Add peppers and herbs and spices. Mix well.

Add chopped sweet potatoes, tomatoes (tinned and fresh) and vegetable stock. Cook on simmer for 15-20 minutes or until sweet potatoes are tender.
