Ingredients
- 1 onion, chopped
- 4 cloves minced garlic
- 1/4 cup olive oil
- 1 cup chopped zucchini
- 2 potatoes, diced
- 3 carrots, sliced
- 8 cups beef stock
- 3 cups chopped canned tomatoes
- 1 cup kidney beans, canned
- 1 cup garbanzo beans
- 2 cups water
- basil, parsley, oregano to taste
- salt and pepper to taste
- 1/2 lb small pasta shells
Preparation
Step 1
In large pot, saute onion and garlic in olive oil, about 5 minutes. Add vegetables, beef stock, tomatoes, beans, and water. Add seasonings, and simmer several hours. Add pasta about 15 minutes before end of cooking time. Serve with Parmesan cheese.
