Ingredients

    onion, chopped

  • 4

    cloves minced garlic

  • 1/4

    cup olive oil

  • 1

    cup chopped zucchini

  • 2

    potatoes, diced

  • 3

    carrots, sliced

  • 8

    cups beef stock

  • 3

    cups chopped canned tomatoes

  • 1

    cup kidney beans, canned

  • 1

    cup garbanzo beans

  • 2

    cups water

  • basil, parsley, oregano to taste

  • salt and pepper to taste

  • 1/2

    lb small pasta shells

Directions

In large pot, saute onion and garlic in olive oil, about 5 minutes. Add vegetables, beef stock, tomatoes, beans, and water. Add seasonings, and simmer several hours. Add pasta about 15 minutes before end of cooking time. Serve with Parmesan cheese.
