Edamame Salad with Baby Beets & Greens

Ingredients

  • 4 small beets
  • 2 C shelled edamame
  • 1 T rice vinegar
  • 2 t soy sauce
  • 1 1/2 t sesame oil
  • 1 t finely grated ginger
  • 2 scallions, finely chopped
  • 1 T julienned basil

Preparation

Step 1

Cook beets over mod heat til tender, @ 20 min. Transfer to plate. Steam edamame in same steamer basket til tender, @ 5 min. Rinse edamame in cold water to cool. Peel & cut beets into wedges.
In med. bowl, stir rice vinegar, soy sauce, sesame oil & grated ginger. Add edamame & beets, scallions & toss to coat. Sprinkle basil on top before serving.
