Appetizer: Chicken Wings in Soy Dijon Marinade

One of my favorite recipes from Ming Tsai. This marinade can be used on a lot of foods including chicken and fish.

Ingredients
- Marinade:
- Party Chicken Wings (the small ones)
- 1/8 cup cracked black peppercorns
- tiny bit of salt and pepper to taste
- 1/2 cup red wine
- 3/4 cup dijon mustard
- 1/4 cup soy sauce
- 4 sprigs thyme, chopped
- 1/4 cup minced garlic
- 1 1/4 cup canola oil
- blue cheese
Preparation
Step 1
For marinade:
In a small, dry saute pan, heat the peppercorns over medium-high heat, stirring, until the peppercorns are fragrant and just beginning to smoke, 2-4 minutes. Transfer to a medium nonreactive bowl and add the salt, wine, mustard, soy sauce, thyme and garlic. Whisk in the canola oil gradually to emulsify the mixture. Sauce will keep refrigerated for 2 weeks.
Dry chicken wings. Deep fry in 365 degrees of oil for 10-12 minutes until chicken is done. Drain and put chicken into big bowl. Add some of the marinade (reserve rest for another use) and blue cheese and toss mixture.
