Cilantro lime fish tacos

Ingredients

  • 3 T fajita sesoning
  • 2 T evoo
  • 1 T chopped fresh cilantro
  • 1 garlic clove minced
  • 1 lime zested, juiced and divided
  • 1 1/2 pds tilapia or haddock
  • 12 flour tortillas 8 in each
  • 2 c shredded lettuce
  • 1/2 c chopped scallions
  • 1 c prepared chunky salsa
  • 1/2 c (4 oz) taco sauce

Preparation

Step 1

In large bowl whisk together fajita seasoning, evoo, cilantro, minced garlic, 1 T lime juice and 1/2 t lime zest til blended
add fish fillets to bowl with seasoning mixture=toss gently to coat-cover and let marinade 15 minutes
grill or fry fish till cooked through turning once
warm flour tortillas in oven wrapped in foil
using fork gently flake fish and drizzle w 1 T lime juice
divide fish among tortillas
top with shredded lettuce, chopped scallions, salsa and taco sauce
serve with sour cream and quacamole if desired
