Blueberry Buckle

Ingredients

  • Topping:
  • 1 and 1/4 cups flour
  • 1/2 cup sugar
  • 1/3 cup milk
  • 1/4 cup (1/2 stick) margarine or butter, softened
  • 1/4 cup shortening
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 and 1/2 fresh or frozen (thawed and well drained) blueberries
  • 1/2 cup sugar
  • 1/3 flour
  • 1/4 margarine or butter, softened
  • 1/2 teaspoon ground cinnamon

Preparation

Step 1

Preheat oven to 350 degrees.
Mix with spoon; flour sugar, mild, margarine or butter, shortening, baking powder, salt, vanilla,and egg.
Spread in ungreased 8-inch squared pan.
Sprinkle with 1 and 1/2 fresh or frozen blueberries.
Mix topping until crumbly and sprinkle over blueberries.
Bake 45 to 50 minutes or until golden brown and toothpick inserted in cake comes out clean.
Tip- substitute raspberries for the blueberries.
