Ingredients
- 1 lb penne pasta, uncooked
- 2 cups sliced button mushrooms
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 teaspoon olive oil
- 2 cups (1 pint) whipping cream
- 1/2 cup athenos crumbled gorgonzola cheese
- 1/2 cup shredded parm cheese
- 2 Tablespoons sherry
Preparation
Step 1
Cook pasta as directed.
Cook and stir mushrooms, onion, and garlic in olive oil in skillet until tender. Heat cream to very gentle boil, in nonstick saucepan. Reduce heat to low; simmer 5 minutes. Add gorgonzola cheese, parm cheese and sherry. Stir mushroom mixture. Sprinkle with additional gorgonzola cheese.
