Ingredients
- 2/3 cup olive oil
- 1/2 cup dry white wine
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 3 cloves garlic crushed
- 4 tablespoons chopped parsley
- 1 1/4 pounds tiny button mushrooms
- Juice of one lemon
- Chopped parsley for garnish
Preparation
Step 1
Place all ingredients, except the mushrooms and half the lemon juice, in a large saucepan and bring to a boil. Reduce the heat and stir in the mushrooms. Cover and simmer for eight to ten minutes.
Transfer the mushrooms and the liquid to a serving dish and allow to cool completely. Serve at room temperature, sprinkle with the remaining lemon juice and garnish with chopped fresh parsley.
