Ingredients
- 2 pounds large potatoes peeled
- 1/4 cup olive oil
- 1/2 cup lemon juice
- 2 teaspoons dried oregano
- 3 cloves garlic chopped finely
- Salt and pepper to taste
- 1/2 cup water
Preparation
Step 1
Preheat oven to 450 . Cut the potatoes into quarters lengthwise and place in a large, shallow, baking dish.
Add the remaining ingredients and stir the potatoes to coat. Bake at the top of the oven, uncovered, for one hour or until lightly golden, crisp on the outside and soft inside. Rearrange the potatoes and add a little more water during cooking, if necessary.
