Broccoli Quiche

Ingredients

  • 6 ounces Canadian bacon or cooked chicken, diced
  • 2 cups frozen (thawed) or raw broccoli chopped
  • 1 cup part-skim ricotta cheese
  • 1/2 cup egg whites (2 egg whites)
  • 1/3 cup + 2 teaspoon plain nonfat yogurt
  • 3 tablespoons flour
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Preparation

Step 1

Preheat oven to 350 degrees. Spray a 9" pie plate with Pam. In pie plate, combine 1/2 the chicken or bacon and 1/2 the broccoli. In food processor or blender, combine the ricotta cheese, egg whites, yogurt, flour, Parmesan cheese, baking powder and salt. Puree until smooth.

Spoon cheese mixture over chicken and broccoli in pie plate. Sprinkle with remaining chicken and broccoli.

Bake 30-45 minutes, until toothpick inserted in center comes out clean.


NOTE: tomatoes and mushrooms are a nice addition to this recipe.
