Ingredients
- 4 Italian plum tomatoes sliced
- 1 (14-ounce) can ripe pitted olives
- 3 tablespoons water
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon salt
- 1 teaspoon coarsely ground pepper
- 1/3 cup shredded Parmesan cheese
- 10 cups torn Romaine lettuce
- 2 cans artichoke hearts, chopped
Preparation
Step 1
Combine 1st 3 ingredients and romaine. In a bowl, combine water, lemon, oil, garlic, salt and pepper. Pour over salad, toss to coat. Sprinkle with cheese.
