Sausage & Mushrooms Pizzadillas

Ingredients

  • 4 oz. sausage
  • 4 oz. mushrooms, sliced
  • 1/2 cup red onion, diced
  • 1 tsp. minced garlic
  • 1 tsp. Italian seasoning
  • 1 tsp. red pepper flakes
  • 1 cup canned diced tomatoes with juice
  • 1/4 cup grated Parmesan
  • 8 flour tortillas, sprayed with olive oil Pam on 1 side
  • 4 oz. shredded mozzarella (or Italian cheese mixture)
  • 1 cup shredded fontina cheese, divided
  • 1/2 cup chopped scallions, divided

Preparation

Step 1

Saute sausage in skillet over med-high heat until cooked; add mushrooms, onion, garlic, Italian seasoning and red pepper flakes. Cook about 3 minutes.

Stir in tomatoes and simmer 3 minutes. Off heat stir in Parmesan.

Heat a nonstick skillet over med-low. Place tortilla, olive oil side down, top with 1/3 Italian cheese, 1/3 sausage-mushroom mixture, 1/3 fontina cheese and 1/3 scallions. Top with tortilla, olive oil side up.
Cover skillet and cook 2-3 min. until brown on the bottom. Carefully flip over and cook another 2 min. until brown. Let sit about 5 min. Cut into wedges.

Serve with Caesar Salad on the side.
