Pumpkin Cake Roll

Ingredients

  • Filling:
  • 3 eggs
  • 1 C sugar
  • 2/3 C canned pumpkin
  • 1 t. lemon juice
  • 3/4 C flour
  • 2 t. cinnamom
  • 1 t. baking powder
  • 1 t. ginger
  • 1/2 t salt
  • 1/2 t nutmeg
  • 1 C chopped walnuts
  • 1 C powder 10 x
  • 2-3 oz cream cheese
  • 1/4 C butter
  • 1/2 t van x

Preparation

Step 1

Mix first five ingredients in bowl. Mix remaining in small bowl and then add to pumpkin mixture. Spread in jelly roll pan thats been sprayed w/ Pam. Sprinkle w/ crushed walnuts. Bake for 15 mins. Invert immediately onto clean dish towel. Sprinkle w/ 10x sugar. Roll up cake in towel til cool; then unroll.

Beat filling ingredients and spread over cake. Reroll cake, cover and chill.
