Chickpea Spaghetti Sauce

I know it sounds weird, but it tastes great, and the kids will eat it.

Ingredients

  • 1 small chopped onion
  • 1/2 cup shredded carrot
  • olive oil
  • 19 oz can of chickpeas, rinsed and drained
  • 1/2 cup milk
  • 2 cups marinara sauce

Preparation

Step 1

1. Saute onion and carrot in oil until tender.
2. Pure onions and carrots with chickpeas and milk in a blender. Add to marinara sauce.
Toss with pasta or tortellini.
