Tilapia with prosciutto and sage

Ingredients

  • 4 8oz pieces of tilapia
  • 8 thin slices proscuitto
  • 12 fresh sage leaves
  • 4 t olive oil

Preparation

Step 1

1) cut fillets lengthwise. pat dry and season with salt and pepper. wrap each piece crosswise with proscuitto tucking in 1 or 2 sage leaves between meat and fish.

2) heat 2t oil in skillet. cook fish about 4 minutes. turn and cook through, about 3 minutes. transfer to platter and cover loosely til all fish is cooked.
