Parmesan Mashed Potatoes

A Weight Watchers' recipe from a tear-out card. We were pleasantly surprised at its tastiness. 2 points per serving.

Ingredients

  • 10 medium red potatoes (about 2-1/2 lbs)
  • 1/2 C buttermilk, warmed
  • 1/2 oz Parmesan cheese, grated (about three Tbsp)
  • 1/4 C chives, chopped
  • 1 tsp salt
  • 1/8 tsp black pepper, ground

Preparation

Step 1

Place potatoes in a large pot and cover with an inch of water. Bring to a boil, reduce heat, simmer and cook until tender, about 30 minutes. Drain and return potatoes to pot. Mash potatoes with a potato masher. Stir in remaining ingredients and mix well.

Yields about 2/3 cup per serving.
