Ingredients
- For fish:
- 1/2 stick unsalted butter, room temp
- 1 t finely chopped shallot
- 1 tsp finely grated lime zest
- 2 tsp fresh lime juice
- 1 tsp minced fresh hot chili, such as thai or serrano
- 1/2 tsp salt
- 6 tilapia fillets
- 1/2 tsp salt
- 2 t vegetable oil
Preparation
Step 1
1) to make chile lime butter , mix all top ingredients together
2) pat fish dry and sprinkle with salt. heat 1t oil in skillet. add 1/2 fish, cook turning once til cook thru, 5-6 minutes. transfer to plate and cover loosely. add 1t oil and cook remaining fish.
3) top fish with lime butter
