Fresh Mozarella & Tomato Salad

This is a recipe from Taste of Home contest winners, 2014.

Ingredients

  • 6 plum tomatoes chopped
  • 2 Cartons (8oz each) fresh mozzarella cheese pearls, drained
  • 1/3 C minced fresh basil
  • 1 TBS. minced fresh parsley
  • 2 tsp. minced fresh mint
  • 1/4 C lemon juice
  • 1/4 C. olive oil
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 med. ripe avocados, pealed chopped

Preparation

Step 1

1. In a large bowl, combine tomatoes, cheese, basil, parsley and mint. Set aside
2. In a small bowl, whisk the lemon juice, oil, salt and pepper. Pour over tomato mixture. toss to coat. Cover and refrig. for at least 1 hour before serving.
3. Just before serving, stir in avocados.
