Apple Walnut Bran muffins

Ingredients

  • Wet Ingredients
  • 1/4 cup butter or margarine, melted
  • 3/4 cup milk
  • 1 large egg
  • 1 cup bran cereal
  • 3/4 cup shredded apple
  • Dry ingredients
  • 1 cup flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Optional additions
  • 1/3 cup chopped toasted walnuts

Preparation

Step 1

1. Preheat oven to 400 degrees.
2. Grease 12 2 and 1/2 inch muffin cups.
3. Whisk all wet ingredients together in medium bowl. Let stand 10 minutes.
4. Combine dry ingredients.
5. Stir wet ingredients into dry ingredients just until combined.
6. Fold in any additions if desired.
7. Spoon batter evenly into prepared muffin cups, filling each about 3/4 full.
8. Bake 20 to 22 minutes,until toothpick inserted comes out clean.
9. Cool in pans on wire racks 5 minutes. Remove and serve warm if possible, or cool completely, wrap well and freeze up to 1 month. To reheat, loosely wrap each muffin in a paper towel and microwave on high 15 to 20 seconds.
