Gayle's Coconut Pound Cake

I got this recipe from my sister's mother-in-law--a wonderful lady and friend.

Ingredients
- Topping:
- 1 lb. butter (unsalted)
- 2 C sugar
- 6 large eggs
- 2 C flour
- 7 oz. pkg./can coconut
- 1 tsp. vanilla
- 1 C sugar
- 1/2 water
- 1 tsp. coconut extract
Preparation
Step 1
1. Cream butter and sugar thoroughly (5 min. mandatory!)
2. Add 1 C flour--beat very well. Add eggs1 at a time mixing very well after each egg.
3. Mix second C flour with coconut in seperate bowl. Blend this well with cake batter.
4. Add vanilla
5. Spray bakers joy for tube pan.
6. Simmer topping ingredients in a small pan for 10 min. Spoon over top of cake directly after it comes out of oven.
7. Let cake set for 15 min. in pan.
