Garlic Oil

Ingredients

  • 1 cup extra-virgin olive oil(divided)
  • 2 lg cloves garlic (1oz), peeled & sliced thin
  • 2 bay leaves
  • 1 lg sprig fresh thyme

Preparation

Step 1

Place a small pot over high heat. When hot, add 1 tbsp oil. Add garlic and saute 30 seconds until just starting to color. Pull off heat and add ramaining oil, bay leaves and thyme. Place pot back over very low heat (the lowest possible) and bring to a very low simmer. let simmer at this level 30 mins. Do not let garlic brown or burn; if you see it starting to brown, you may have to use a "flame tamer" to elevate it above the burner (available at kitchenware stores and on the internet) or hold it slightly above the burner. Reserve cold. Remove bay leaves and thyme before using.
