Ingredients
- 2 pkg yellow cornbread mix
- 6 raw eggs
- 1/2 cup green onions
- 1/2 cup celery
- 1/2 cup cooked rice
- salt and lots of black pepper
- 1 chicken boiled and deboned (save broth)
Preparation
Step 1
Preheat oven to 350. Put chicken in a large pot, put as much water as you can, salt and pepper and put a stick of butter in the water. (I also add packaged chicken broth for a richer broth.
Saute celery and onions, mix all ingredients, add deboned chicken, add broth so that mixture is almost like soup. Put in a large pan and bake until liquid is gone, about 1 1/2 hours.
