Festive Spinach Salad

Ingredients

  • 1 (6oz.) package fresh spinach or arugula
  • 1 (15oz.) can mandarin oranges, undrained
  • 1 pint fresh strawberries, hulled and halved
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon red wine vinegar
  • 1/3 cup Extra Virgin Olive oil
  • 1 garlic clove, minced
  • 1 tablespoon, chopped fresh basil
  • 1/4 cup ine nuts, toasted
  • 1/4 cup crumbled goat cheese (optional)

Preparation

Step 1

Place spinach in a large salad bowl. Drain oranges, reserving juice. Add oranges and strawberries to spinach; set aside.
Pour 1/3 cup of the reserved juice into a small bowl for the dressing. Add balsamic and red wine vinegars. Gradually whisk in oil. Stir in garlic and basil; season to taste with salt and freshly ground pepper.
Drizzle dressing over salad; toss. Sprinkle with pine nuts and (if desired) goat cheese, and serve.
