Ingredients
- Dressing
- 1/3 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons soy sauce
- Dash hot pepper sauce
- Salad
- 1 cup carrots, sliced
- 2 garlic cloves, pressed
- 1 1 and 1/2inch piece ginger root, cut in half and pressed, or 1/4 teaspoon ginger powder
- 1 pound boneless chicken breasts, cut into thin slices
- 1 can (8oz.) pineapple chunks
- 1/4 cup green onion
- 1 package (10oz.) fresh spinach leaves

Step 1
Whisk all dressing ingredients in a 1-quart bowl and set aside. Score carrots with a zester,and slice. Press garlic and ginger. Heat 1 teaspoon oil in a wok or skillet. Add carrots, garlic, ginger, chicken and sesame seeds; cover with a clear lid. Cook 4 to 5 minutes or until chicken is done. On serving platter, arrange pineapple and green onion on top of spinach leaves. Place chicken mixture and dressing on top of salad. Toss gently
