Zucchini Croquettes

Ingredients

  • Croquettes:
  • 6 medium zucchini
  • 3/4 teaspoon salt
  • 4 eggs
  • 1 t minced garlic
  • 3/4 C flour
  • 1/2 C grated Parmesan
  • 1/4 t pepper
  • non stick spray
  • Sour Cream\
  • Corn on the cob

Preparation

Step 1

Coarsley shred zucchini. Toss shredded zucchini with salt in bowl. Place in colander and press to drain for apx 15 minutes. In another bowl beat eggs and garli. Stir in flour, cheese, onion and pepper just until moistened. Coat large skillet with nonstick spray and heat to medium temperature. Pour 1/2 C zucchini batter onto skillet, pressing down to form flat cakes. Fill pan wit a s manyy batter cakes and pan will hold and fry on both sides until golden brown. Serve with sour cream.

Serve with cooked corn.
