Ingredients
- 1/2 c. olive oil
- 2 c. finely chopped yellow onions
- 4 pounds ripe plum or meaty tomatoes - skinned & seeded
- 6 oz tomato paste
- 2 tblsp minced fresh basil
- 1/2 tsp oregano
- 1 tsp salt
- 1 tblsp black pepper
- 4 c water
- 5 garlic cloves - peeled & finely minced
- 1/2 c. chopped parsley
Preparation
Step 1
heat olive oil in a large deep pot. Add onions & cook covered over low heat until tender - 25 min
Add tomatoes, tomato paste, basil, oregano, s&p, - simmer 10 min stirring occasionally
Add the water & cook very slowly, uncovered for 3 hours
Stir in garlic & parsley & simmer for another 5 min.
Taste & correct seasoning if necessary. Use immediately or cool to room temp. before covering
Refrigerate or freeze
