Fluffy Carrot Dip

Ingredients

  • 2-16 oz pkg Carrots, roughly chopped
  • 1/4 c plus 2 Tb olive oil
  • 1/4 c red wine vinegar
  • 3 garlic cloves, minced
  • 1 1/4 tsp chili paste
  • 1 1/2 tsp ground ginger
  • celery sticks, pita wedges or any other "dipping" food

Preparation

Step 1

Bring a large pot of water to boil, salt liberally. Cook carrots in boiling water, over medium-high heat, for 20 mins, or unitl carrots are tender; drain.
Transfer to a food processor or blender. Add remaining ingredients and process until the carrot mixture is light and fluffy.
Serve with celery sticks, pita wedges or any other dippers.

Refrigerate leftovers.
