Corn and Avocado Salad

Ingredients

  • 3 ears corn
  • 1 avocado, cut up
  • 2 scallions, thinly sliced
  • 1 T olive oil
  • 1/2 t kosher salt
  • 1/4 t black pepper

Preparation

Step 1

Using a sharp knife, cut the kernels off the corn. In a medium bowl, toss with other ingredients and mix well. Refrigerate for 5-10 mins and serve.
