Ingredients
- 3 ears corn
- 1 avocado, cut up
- 2 scallions, thinly sliced
- 1 T olive oil
- 1/2 t kosher salt
- 1/4 t black pepper
Preparation
Step 1
Using a sharp knife, cut the kernels off the corn. In a medium bowl, toss with other ingredients and mix well. Refrigerate for 5-10 mins and serve.
