Corn Serrano Salad

Ingredients

  • 4 Ears of Corn
  • 2 (zested and juiced)
  • 1/4 cup cilantro
  • 1 pint grape tomatoes
  • 1 serrano pepper (minced)
  • 3 scallions
  • 1 clove garlic
  • 2 tbsp olive oil

Preparation

Step 1

Soak corn in very salty water (like sea water) for at least 3 hours.

Grill corn until charred at parts, about 3 minutes per side.

Cut off kernels from ears into bowl and toss with lime zest, juice, cilantro, tomatoes, scallions, garlic and pepper. Add olive oil and toss to coat. Salt and pepper to season.

Serve with chicken or pork chops.
