Pumpkin-Coconut Bars

Ingredients

  • 2 cups Bisquick baking mix
  • 1 cup chopped pecans
  • 1 cup flaked coconut
  • 2/3 cup sugar
  • 1 and 1/2 teaspoon ground cinnamon
  • 1 and 1/2 teaspoon ground nutmeg
  • 3 eggs
  • 1 can (16 oz. ) pumpkin
  • Easy coconut Frosting
  • 1 cup powdered sugar
  • milk
  • 1/2 teaspoon coconut flavoring

Preparation

Step 1

Heat oven to 325 degrees. Grease jelly roll pan - 15x10 and 1/2 x1 ). Mix all ingredients except frosting; beat 40 strokes. Spread in pan. Bake until wooden pick inserted in center comes out clean, about 20 minutes; cool completely.
Make Easy Coconut Frosting
-Mix 1 cup powdered sugar, 1 tablespoon plus 2 teaspoons milk and 1/2 teaspoon coconut flavoring until smooth.
Spread Easy Coconut frosting over top of bars. Cut into bars, about 2x1 inch
