Cracked Wheat Salad

Ingredients

  • 4 c. water
  • 2 c. bulgur
  • 1 c. chopped pecans
  • 1 c. dried currants
  • 4 tblsp chopped Italian parsley
  • 1 tblsp olive oil
  • grated zest of of 1 med. onion
  • s&p

Preparation

Step 1

In a large saucepan, combine water & bulgur - bring to a boil & simmer 35 - 40 mins
or until water is absorbed & wheat is tender, but not mushy

Transfer to a bowl & refrigerate until cool uncovered

Add pecans, currants, parsley, olive oil, orange zest, s&p

Toss thoroughly - serve cool or at room temp
