Barbecued Chuck Roast

Ingredients

  • 2 cloves garlic, crushed
  • 1/4 olive oil
  • 1/4 cup wine vinegar
  • 1/4 sherry
  • 2 teaspoons soy sauce
  • 1 teaspoon dried rosemary leaves, crushed
  • 1/2 teaspoon dry mustard
  • 3 to 4 pound beef chuck roast, 2 and 1/2 to 3 inches thick
  • 2 tablespoons ketchup

Preparation

Step 1

Mix all ingredients except beef roast and ketchup; pour over beef. Cover and refrigerate, turning beef 4 or 5 times, at least 24 hours.
Remove beef; stir ketchup into marinade. Cover and grill beef on a medium grill. Brush with the marinade 4 to 5 times, until desired doneness, 1 to 1 and 1/4 hours for medium. Cut into serving pieces.
