Ingredients
- 3 c coarsely chopped peeled peaches (about 1 lb)
- 1 1/2 c water
- 3/4 c sugar
- 2 T fresh lemon juice
- 2 T white rum
Preparation
Step 1
1. Combine chopped peaches and 1/2 c water in a food processor; process until smooth. Press peach mixture through a fine sieve into a bowl; discard solids.
2. Combine 1 c water and sugar in a medium saucepan; bring to a boil. Remove from heat. Stir in peach mixture, juice and rum. Pour mixture into an 8-in square baking dish, cover and freeze 4 hrs until firm.
3. Place mixture in a food processor; process until slushy. Freeze 3 hrs. Soften slightly in the refrigerator for 30 mins before serving.
Yields 8 servings (serving 2/3 c)
