AG Meatballs

Got this recipe from a local restaurant's cooking class.

Ingredients

  • 1 lb ground beef
  • 1/2 lb ground veal (may sub beef also)
  • 1/2 lb ground pork
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 c romano cheese, freshly grated
  • 2 c stale italian bread, crumbled
  • 1 1/2 c lukewarm water
  • 1 c olive oil, divided
  • salt & pepper to taste

Preparation

Step 1

Combine meats & olive oil in large bowl. Add garlic, eggs, cheese, parsley, salt & pepper.
Blend bread crumbs into meat mixture. Slowly add water 1/2 c at a time. The mixture should be very moist but still hold its shape. Roll into meatballs.
Heat oil in large skillet. Fry meatballs in batches. When very brown & slightly crisp, remove from heat & drain.
Alternately, bake on sheet pan at 350 for 15-20 minutes.
